1. Cream yeast with 1 tbsp sugar. Add 1/4 cup lukewarm water. 3. Divide into 8 portions as per Estelle 4. Boil both sides 1 min each 5. Put bagels onto oven tray. Bake 15-20 mins 240C till golden. 2. Sift flour, salt & remaining sugar. Combine lukewarm milk, water, egg-yolk & oil. Add to dry ingredients with yeast mixture, mix to stiff dough. (Stand till double in bulk)
